Strawberry oat crumble bars

The sun is finally showing itself after months of absence and I get into spring modus right away. All I wanna do is be outside, enjoy the warmth and light – and eat fresh berries. Maybe that’s why I got seduced to buy fresh strawberries at the supermarket today and – of course got disappointed because they are waaay out of season. They smelled nice, but lacked in flavor and sweetness.

Luckily baking brought the solution here, because they’re perfect in this strawberry oat crumble bar recipe. They came out really nice and now I can’t wait to try it with other fruits like peaches, raspberries and blackberries. Of course they won’t be in season very soon either, but when they do – I’ll be ready for them.

You'll need a standard loaf pan and a foodprocessor.
Ingredients
  • Strawberry filling
  • 2 cups Fresh strawberries (chopped)
  • 1 Tbs Lime juice
  • 1 tsp Ground vanilla
  • 1 tbs Arrowroot powder or any other starch
  • 1 tbs Maple syrup (only if the fruit isn't sweet enough)
  • Crust
  • 2 cups Rolled oat (the old fashioned coarse kind)
  • 1 cup Almond meal (or whole almonds)
  • 1 tsp Ground vanilla
  • Pinch of himalayan salt
  • ¼ cup + 2 tbs Grass fed butter or coconut oil
  • ¼ cup Maple syrup
Instructions
  1. Preheat oven to 175°C or 350°F.
  2. Start by mixing all the ingredients for the filling in a bowl and set this aside.
  3. Prepare the loaf pan with parchment paper.
  4. Place rolled oats and almond meal, vanilla and salt in foodprocessor an pulse a few times. (if using whole almond, grind them first until you have a fine meal before adding the rolled oat). You don't want it to get too fine.
  5. Add the soft butter and maple syrup and pulse until you have a coarse crumb mixture that sticks together when you pinch it.
  6. Press about two thirds of the oat crumbs into the prepared loaf pan. Firmly press it evenly down to make the bar base.
  7. Pour the strawberry filling over the base and gently press it down.
  8. Use your fingers and crumble the remaining oat crumbs over the filling. Press it down gently.
  9. Bake in the oven for 35 minutes until golden brown.
  10. Let it cool off before cutting it into bars.
  11. Keep in an airtight container, preferably in the fridge.
