Most recipes I posted so far are desserts. This is not on purpose, I guess I just like making desserts a lot more than anything else. But still, as nice as they are to eat, you can’t have them all the time. Even when the ingredients are changed from processed to whole – from sugar loaded to refined sugar-free. They are still treats that should be eaten in moderation. Aw man! I know! But going through the process of making the treats yourself, makes you not want to eat all the cookies in one go. You can’t. You’ve put all the hard work in it, so that makes you want to savor it. And I think that is the way to go. Also sharing the goodies. It’s a good feeling and there’s no better way to fill your time than making nice treats for other people and to share. Or a nice soup. Because that’s where this recipe is about. A creamy mushroom soup, without actually any cream in it. The secret is in the soaked mushrooms and blending with a good immersion blender. You can make it vegan if you sub the butter for olive oil or coconut oil. Just remember to start with soaking the dry shiitake mushrooms because that takes the most time.

Serves: 4 bowls
 
Ingredients
  • 6 dried shiitake or Chinese mushrooms (soaked for at least 30 minutes)
  • 250 grams chestnut mushrooms
  • 1 chopped celery stalk
  • a sprig of thyme
  • 3 spring onions, green part only
  • 1 tbs grass fed butter
  • 4 cups of water
  • Sea salt
  • fresh cracked black pepper
Instructions
  1. Start by soaking the mushrooms.
  2. Chop the celery, the spring onion and the chestnut mushrooms.
  3. Melt the butter in pot.
  4. Add the chopped celery and thyme sprigs.
  5. Add the spring onion.
  6. Cut the shiitakes and discard the stems, keep the soaking water!
  7. Add all the mushrooms to the pot and add the water and soaking water.
  8. Bring to boil and let it sit for 15 minutes.
  9. Take the pot off the heat and blend with immersion blender until smooth.
  10. Season with salt and pepper.
